The kitchen is overflowing with zucchini from local farmers this summer. Besides making zucchini bread, we have been sneaking zucchini into just about everything we can. Grilled zucchini, baked zucchini, sauteed zucchini, etc., etc. So, it only seemed natural to find a way to add it to homemade hummus. The results? Tasty and a great way to get some vegetables into the kids without them knowing it!
Homemade Zucchini Hummus
Prep Time: 10 minutes
1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1 zucchini, yellow or green, chopped into small pieces
1 can garbanzo beans, drained
1 tablespoon lemon juice
1 tablespoon lime juice
2 tablespoons tahini
1 teaspoon cumin
½ teaspoon salt
½ teaspoon paprika
- In a pan, saute the garlic and zucchini in the olive oil until the zucchini softens.
- Place garlic, zucchini, garbanzo beans, lemon juice, lime juice, tahini, cumin, salt and paprika in food processor and process until light and smooth.
- Serve with pita chips, flatbread, or as a vegetable dip.
